YIELD: 8 Servings

1 T ghee or coconut oil
1/2 yellow onion, diced
12 eggs, beaten
2 cups broccoli, chopped
3 green onions, chopped
2 cloves garlic, chopped
1/4 c Brewer’s Yeast
1/2 t rosemary, dried
1/2 t paprika
Pinch cayenne pepper


  • Preheat oven to 350 degrees
  • Melt the ghee or oil. Pour into a 9×11″ glass baking dish and grease the bottom with paper towel
  • Saute diced yellow onion in hte pan with the remaining bit of melted butter. Season to taste with sea salt and pepper
  • Mix beaten eggs with broccoli, garlic and yeast. Add onions, rosemary, cayenne, salt and pepper
  • Pour the mixture into baking dish. Sprinkle with paprika. Bake for 40 minutes or until the edges are golden brown and the center is no longer runny or loose
  • Remove from oven. Allow to cool before slicing. The frittata will rise upon baking and flatten out a bit upon cooling.
